Orecchiette anchovies and cherry tomatoes

Yes, it is too warm to cook but if you love pasta you can skip one or two days but at the third one you have to boil some water. There are lot of summer recipes for pasta, some of them include also cold pasta salad, but they all include some tomatoes.

And this simple one is one of these.

Hope you like anchovies because this is a combination you really cannot miss.


INGREDIENTS for 2 people

5/7 anchovies

10 cherry tomatoes

Extra virgin olive oil


200 gr of pasta



Heat two tablespoons of extra virgin olive oil in a large pan. Once hot place your anchovies and with the help of a wood spoon divide them in small pieces.

Wash your cherry tomatoes, cut them in two and add them in the pan.

Cook at a low heat for five minutes, they have to be soft but not to lose all the skin.

In the meantime boil the water for your pasta, add some coarse salt and cook pasta until al dente. Turn on the cooker where your pan is and when pasta is al dente transfer it to the pan with some spoons of cooking water. Stir for couple of minutes until you have a nice creamy sauce. Serve immediately and enjoy!
