Pasta e Fagioli

Western movies and sofa with our dad. What We could give to have them now!

There are movies that I really know every sentence by heart for all the times we watched them on repeat.

There were two characters really famous in Italy called Bud Spencer and Terence Hill and we loved them so much that before Francesca was born, Bud Spencer was my imaginary friend 😂

.

This dish is kind of related to these movies in my minds and it is the king of comfort food, especially in winter times. I also add some more olive oil and parmesan on top even if not suggested.

You can use fresh beans but if you are in a rush a tin of “borlotti beans” will do its job!



Ingredients


200 gr of borlotti beans or 1 tin of borlotti beans

200 gr of ditali pasta

Extra virgin olive oil

Rosemary

1/4 of onion chopped

1/2 carrot chopped

1/4 of celery stick

1/2 tin of polpa or passata

salt


Method


Soak your beans in cold water for at least 8 hours

After this time, boil them with plenty water until softened, it should take around two hours. Do not throw away this water, you’ll need later.

Start chopping in little squares the onion, carrot and celery.

Heat two spoons of olive oil in a soup pan and stir fry the veggies for your soffritto.

Once softened add your bacon lardons and stir until ready. Now add the beans and let them cook for two minutes.

Add the tomato sauce and stir for couple of minutes more

Now it is time for the pasta. You need to add it directly to the pan with the beans and cook as a risotto, adding water from time to time and stirring constantly. Add some salt to season and rosemary if you like. Once the pasta is ready let it rest for five minutes and serve it
