Pear honey, thyme and walnuts

Baked apples or apples in the oven were really popular when we were not feeling well or staying at home with a seasonal fever.

My granny used to make them for us thinking they were acting as penicillin. There are certain types of food in Italy that are believed to have magical powers like broth with pastina and baked apples. Then when feeling better there was an upgraded version: the apple was cooked into puff pastry rolled in sugar and yes, it has another flavor. You immediately feel better.

So when baking these pears my thoughts went on these sweet memories and felt like to be again in my granny's kitchen.

I made a kind of luxury version of it using walnuts, honey, and thyme. I also have tried them with some gorgonzola on top. Lovely.

gorgonzola for a savoury version


Slice the pear in half vertically from the stem to the bottom and scoop out the core from both halves with the help of a spoon.

Place them in a tray on some baking paper and fill them with pieces of walnuts and add a sprinkle of brown sugar on top. Put some thyme on top of them and around them.

Put them now in the oven at 180 degrees for 25/30 minutes. Check from time to time, it may require more time depending on your pears.

Once ready, add some liquid honey on top, and enjoy!
