
Polenta Mushrooms and Gorgonzola

Polenta is not really typical from the place I am from but it still a meal that is really popular during winter time.
Especially for those rainy and foggy days.
This is a type of polenta called Istantanea that means that in a really short time it gets ready. It is different from the classic one but still really good.
There are plenty recipes for it. With a sausage tomato sauce and plenty cheese or white like this one.
You can also make more and save it to prepare a really nice snack like the polenta chips!
Ingredients
250 gr of Polenta
350 gr of white mushrooms
Gorgonzola cheese
salt
extra virgin olive oil
Method
Wash and clean your mushrooms. Slice them and cook them with two spoons of extra virgin olive oil and a pinch of salt.
Once they are ready prepare your polenta following the instructions you find in the bag.
Now place your polenta in the plates and add the gorgonzola cheese to melt and after add the mushrooms. Add a bit of olive oil if you like.
Serve hot and enjoy!
