This is another recipe that got 200 versions- so I thought to add mine as well.
Chicken is a favourite at home- my boys eat it however I cook it. Fried, of course, reaches the first position in their heart but there are a couple of recipes a bit lighter that they lick their chops! One I always do (will post the recipe- promise) is the one with carrots and onion but today is all about a bit stronger taste.
This version is certainly richer with a few Mediterranean flavors involved.
Capers, olives, tomatoes, and the holy trinity of onion, carrot, and celery. Plus a bit of herbs like bay leaves, rosemary, and thyme. And a touch of salt.
Anything else? Just a bit of patience while cooking it as the smell, I know, is inebriating and you want to eat it before it has finished cooking!
Ingredients (2 or 3 people)
3 chicken drumsticks
3 chicken thighs
10 black olives
1 large onion
herbs: bay leaves- thyme- rosemary
Extra virgin olive oil- salt
a glass of white wine (optional)
Slice your onion, clean, peel and slice your carrots and start cooking them with two spoons of extra virgin olive oil.
When almost cooked add your chicken and all the other ingredients.
Add some water from time to time until absorbed and cover with a lid. Stir and turn the meat to cook homogeneously on both sides.
Let absorb the water until cooked.
Try and see if you need to adjust it with salt and pepper.
