Rich tomato sauce with pancetta

Busy? No time for a long break? Forgot to go to the supermarket?
Well, no problem! This recipe is for you ❤️
I always have some chopped onions in the freezer and a box of lardons or pancetta kept in the fridge for emergency recipes!
No need to overcomplicate your life with 200 sauces/ spices for Italian meals: we are simple people 😂
For this rich sauce you’ll need: extra virgin olive oil, half onion, bacon or lardons, tomato sauce and salt and chillies if you like 🌶🌶🌶
Ingredients for 2people
300 gr of bacon/lardons
1/2 onion finely chopped
1/2 tea spoon of chilli flakes or 1 fresh chilli
400 gr of tomato sauce/ passata or plummed tomatoes
1 spoon of coarse salt
220 gr of pasta
Parmesan cheese
METHOD
FOR THE SAUCE
Chop your onion in little square pieces.
Two tablespoons of extra virgin olive oil in a large pan, turn on the cooker. Once hot add the onion, stir until golden and then add the bacon.
Add one teaspoon of crushed chillies and keep stirring until the bacon is well cooked.
Add now the tomato sauce, stir it and cook at a low heat for around 15-20 minute until it thicknes.
Taste it and adjust the sauce with salt, pepper and more chilli flakes if you like.
FOR THE PASTA
Bring a large pot of water to boil, add one spoon of coarse salt
Add the pasta and cook it until AL DENTE
Now drain the pasta and add it to the sauce and toss with energy to coat with tongs
Serve it and enjoy it!
