Tortellini in brodo

I love tortellini, I love them with everything they got in and with every recipe they are coming.
With broth or with cream, it is a kind of pasta I would eat every day.
My mum was not of the same advice so rarely during my childhood I had them. That is maybe why I love them so much!
The one you find in the supermarket cannot be compared to the homemade ones (like all the things) but they are still amazing.
I found them on Mydelibox, an Italian food provider in UK, when I was buying some baby food for my son and it was love at first sight.
In lot of places in Italy Tortellini in brodo are served the night before Christmas. I like considering them something light so I always love them couple of days after the big nights.
The broth can be with vegetables if you like.
I chose chicken as I wanted it a bit richer, but also with veal is lovely, especially if you like a bit of meat after!
Ingredients
1 onion
1/2 carrots
2 large potatoes
1 vine tomato
1 celery stick
2 chicken thighs
extra virgin olive oil
salt
2 l of water
Method
Wash your vegetables.
Dice your onion. Peel your carrot and the celery and slice them.
Cut your tomato in 4 parts.
Place all your veggies and the chicken in a large pot, add the water and bring it to boil.
Let it cook for at least 1 hour at medium heat. Check from time to time.
Once your broth is ready you can now filter it with the help of a colander.
Once filtered, bring it to boil and add your tortellini. Follow instructions how to cook them.
Adjust with salt if needed.
Serve hot and Buon Appetito!
